Masala Bhaat is one of the best Marathi recipes that you can make for a quick meal with some Raita, salad or pickle. 

Masala Bhaat also known as Masala Rice  is a delicious one pot meal and is served with a bowl of curd, raita, papad and pickle for a quick lunch or dinner. It is a wonderful medley of rice and assorted vegetables like potato, beans, tendli, peas, brinjal along with some whole and ground spices that tastes great due to various textures and flavors. This combination of vegetables is truely to one’s choice and availability. For instance, if you don’t like to add brinjal or tendli, then opt for cauliflower or carrot instead or whatever that you get as per the season or is in store.

Unlike Khandeshi Masala Khichadi that uses different variety of lentils, this Masala Bhaat recipe uses different types of Veggies.

Yes, it is a beautiful celebration of Mixed Veggies cooked with rice and spices that is often served in Maharashtrian festivities. Recipe Ingredients

  • Rice - 3/4 cup
  • Potato (Peeled-diced) - 1 medium
  • Beans (Cut) - 1/2 cup
  • Cauliflower (Cut in small florets) - 1/2 cup
  • Tendli/Kundaru (Cut into half) - 1/2 cup
  • Small Brinjal or eggplants (Cut in quarters) - 2
  • Salt - To taste
  • Water - 3 cups
  • Oil or ghee - 1-2 tablespoon 

Powdered Spices -

  • Turmeric powder - 1 teaspoon
  • Red chilli powder - 1 teaspoon
  • Goda masala (Or take Garam masala) - 2-3 teaspoon
  • Asafoetida (Hing) - Less than 1/4 teaspoon 

Whole Spices - 

  • Mustard seeds - 1 teaspoon
  • Dry red chilli - 2-3
  • Bay leaf (Tej patta) - 2
  • Black pepper (Kali mirch) - 5-7
  • Cloves (Laung) - 4
  • Curry leaves - 10-15 

To Garnish - 

  • Dessicated coconut
  • Ghee
  • Freshly chopped coriander or Kothambir
  • Fried cashew nuts

How to make Masala Bhaat

In making of Masala Bhaat, wash and soak rice in water for an hour. Drain excess amount of water and keep this soaked rice aside.

  1. Now heat ghee or oil in a pressure cooker and add in all the whole spices. Let these spices crakle and give aroma.
  2. To this add all the veggies, soaked rice and saute for a minute or two to bring together all the flavors.
  3. Add water, salt, powdered spices and give a nice stir. Keep the quantity of water to the desiered consistency of Masala Bhat. For instance, I prefer a ‘Pulao Kind’ of consistency, hence 3 cups of water was sufficient for me, but if you want a ‘Porridge’ or ‘Khichadi’ texture then you can add some more water.
  4. Close the lid of pressure cooker and let it cook on medium to high heat for 2 whistles.
  5. Switch off the flame and let the pressure release on its own.
  6. Masala Bhat is now ready. Serve in a plate or bowl with ghee. Do not forget to garnish with scrapped coconut, chopped coriander and fried or toasted cashew nuts.
