Tondli Chi Bhaji is yet another lip smacking recipe from Maharashtrian cuisine which is made with shallow fried Tendli, Tindora or Ivy Gourd. This recipe goes very well with rotis and paranthas along with some dal or gravy on side.

Seasoned with whole spices and Goda Masala this Tendle Chi Bhaji is an easy and aromatic addition to your meals. Here we also give you the recipe to make a small batch of ‘Goda Masala’ which is a speciality of Maharastrian Cuisine. However you can also use the regular Garam Masala, though the dish would taste wonderful that way too, but you would miss the classic Maharastrian flavors.

Since tindora is a soft vegetable or more like a small cucumber, hence it doesn’t takes much of time in cooking and therefore you can make quick recipes out of it. In North India Ivy Gourd is also popularly known as ‘Kundru’. If you have ever worked with this vegetable, then you would know that when you cut, it is light green in color but some Kundrus even come out red in color. Do not discard these red ones unless they are squishy. These red kundrus have a wonderful tangy flavor and I always make sure to add them in my vegetable for an extra punch.

Recipe Ingredients

For Tondli Chi Bhaji - 

  • Tendle/Tindora/Ivy Gourd - 250 gms.
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 6-8
  • Turmeric powder - 1/2 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Salt - To taste
  • Dry mango powder (Amchur) - 1/2 teaspoon
  • Oil - 1 tablespoon 

To make a small batch of ‘Goda Masala’ - 

  • Cumin seeds (Jeera) - 2 teaspoon
  • White sesame seeds (Safed til) - 2 teaspoon
  • Coriander seeds (Khadi Dhaniya)- 4 teaspoon or 2 tablespoon
  • Asafoetida (Hing) - 1/4 teaspoon
  • Dry red chilli (Sookhi lal mirch) - 2 broken
  • Dessicated coconut - 2 tablespoon
  • Staranise (Chakraphool) - 1/2
  • Black pepper (Kali mirch) - 4
  • Green cardamom (Choti elaichi) - 1
  • Bay leaf (Tej patta) - 2
  • Cloves (Laung) - 2
  • Cinnamon (Dalchini) - 1/2 inch stick

How to make Tondli Chi Bhaji

To begin with making this Tondli Chi Bhaji we have to make Goda Masala which is a speciality of Maharashtrian Cuisine just like Punjabi & North Indian Meals are incomplete without Garam Masala.

Making Goda Masala -

  1. In a pan dry roast dessicated coconut on low flame till it gives out aroma. Empty on a plate.
  2. Now in the same pan roast the remaining ingredients (Except hing) while strring constantly. Roast on low to medium flame till they become medium brown in color and turn aromatic. Empty on a plate.
  3. Let the contents get back to room temperature and then combine everything including hing and grind to a fine powder.
  4. A small batch of Goda Masala is ready for your Maharashtrian cooking!

Making Tondli Chi Bhaji -

  1. Wash ivy gourd and cut into half lengthwise. Keep aside.
  2. Now in a pan heat oil and add in mustard seeds, curry leaves to crakle.
  3. Add in cut ivy gourd and shallow fry for few minutes uncovered till it gets a light golden color.
  4. Now sprinkle some water, reduce the flame to sim and cook covered for 7-8 minutes or till it is cooked to your perfection. 
  5. Mix in salt, red chilli powder, amchur and about 1-2 teaspoon of freshly made Goda Masala.
  6. Toss to combine everything and remove from heat.
  7. Tondli Chi Bhaji is ready to serve.
