Recipe Ingredients

  • Gram flour/besan – 2 cups
  • Ghee (Melted) or soft butter– 1 cup
  • Cardamom powder – 1/4 teaspoon
  • Baking powder – 1/2 teaspoon
  • Sugar (Powdered) – 3/4 cup
  • Almond/pistachio flakes – For topping (Optional)

How to make Besan Ki Nan Khatai Without Oven

  • To begin with making this traditional ‘Besan ki Nan Khatai’ on gas stove, combine all the ingredients in a large mixing bowl and form a soft dough.
  • You can add 1 tablespoon of curd in the mixture to hold the dough, otherwise simply increase the quantity of ghee, if required.
  • Divide this dough into equal number of lemon size balls, top with almond or pistachio flakes and slightly pinch in between with your thumb.
  • Now in a heavy base pan or skillet spread around 2 cups of salt and place a wire stand. Cover it with a lid and allow it get warm on low flame.
  • Meanwhile, assemble the nan khatais on a greased plate with ghee. Keep a distance of 2 inches in between each piece.
  • Now carefully keep this plate on the wire stand inside the warm pan.
  • Cover back the pan and cook on low flame for 15-20 minutes or till they get puffy and golden.
  • Remove from heat and allow to cool at room temperature.
  • Store in an air tight container and serve when required.
