As far as the recipe is concerned…No…we are not asking you to buy Multigrain Flour from the market, nor even asking to buy grains and then pound them into flour.

In this recipe we share with you a simple technique to make Multigrain Flour at home with assorted flours. Just combine these 5 super rich flours in given combination and your very own Multigrain Atta is ready to roll Rotis, Parathas, Bhakhri, Cheelas and more. Use this multigrain atta to make Multigrain Palak Cheela for a nutritious Breakfast.

Multigrain Rotis have a slight dense texture and taste delightfuly rustic with Dals, Kadhi, Curries and Stir fried Vegetables. Smear some ‘Ghee’ before serving and you enhance the nutritional content. The first step in starting a healthy diet is making the switch from refined carbohydrates to complex carbohydrates. This often includes switching from white bread to something like whole wheat bread or Multigrain Bread. So if you are following or planning to follow a Weight Loss Diet or suffering with Diabetes, then you should incorporate these Multigrain Rotis in your regular diet for sure!

 

What is Multigrain Atta ?

Multigrain Atta is a unique blend of various and wholesome grains that are ground to mix with whole grain flour. People these days are choosing Multigrain Atta over whole grain Atta because it provides more benefits.

It contains flour made up with a mix of different kinds of grains. Most commonly used grains in a Multigrain Atta are oats, millet, flax (linseed), buckwheat, soybean, Amaranth grain, Jowar, barley (millet), Bajra, Ragi, and Maize. Amaranth grain contains higher Proteins. People who are allergic to flour also like this grain because it is gluten-free. Barley contains a bountiful amount of Potassium and Fibre. It releases starch into Chapatis. Oats are gaining popularity among people because of its health benefits. It also contains rich fibre and makes the Chapattis softer. Bajre ki Roti is famous among Northern India because of its rich protein factor, whereas Makke Ki Roti is a popular bread from Punjabi cuisine. Since Multigrain Roti have a slight dense texture, hence it is advisible to smear them with Ghee before serving. This not only increases the nutrition, but brings in some moistness too.

Weight Loss Diet Lunch Menu -

For a simple Weight Loss Lunch Menu we recommend to serve 1-2 Multigrain Rotis with a small bowl of Aloo Chawali Sabzi or Aloo Matar Gravy cooked in pressure cooker. Also balance your diet with a small bowl of Palak Tamatar Sabzi and Lauki Raita or Dhaniya Raita.

Recipe Ingredients

  • Whole wheat flour (Gehu ka atta) - 1/2 cup
  • Oatmeal (Jaee ka atta) - 1/4 cup
  • Black millet flour (Bajra atta) - 1/2 cup
  • Gramflour (Besan) - 1/4 cup
  • Ragi flour (Nachini ka atta) - 1/2 cup
  • Water (Preferably warm) - To make dough 

To Serve -

  • Desi ghee

How to make Multigrain Roti

Making Multigrain Roti at home is easy and the real trick lies in making a Perfect Muligrain Dough which you would excel in 1 or 2 trials for sure. Here we are giving you recipe to make a small batch of Multigrain Atta, you can double or triple the recipe as per your requirement. 

Making Multigrain Flour & Dough -

  1. Take a large mixing bowl and combine together all the 5 flours. Mix well with a spoon to combine well.
  2. Keep the required amount of flour in the bowl and store remaining in a clean jar for further use.
  3. Now knead flour with using luke warm water little by little. Multigrain flour has the tendency to release water after sometime, hence make a ‘Stiff Dough’.
  4. Cover it with a lid or plate and keep to rest for 10 minutes. After resting knead it once again to bring in softness. 

Making Multigrain Rotis - 

  1. Divide the prepared dough in equal lemon size balls. Dust with dry flour and roll into a circle the same way as you roll regular Rotis, but slight thicker.
  2. Carefully place on a hot pan or skillet and when you notice little brown spots appear on the botton side, turn it and cook for half a minute.
  3. Now very carefully lift it up with tongs and cook on open flame on both the sides.
  4. Multigrain Roti is now ready. Smear with ghee and serve. 

Note -

  1. Use ‘Mitti Ka Tawa’ or Clay Pan to cook these Rotis. This would give you a perfect rustic texture. Refer snaps, we did the same!
