Recipe Ingredients

  • Ragi flour (Nachini atta) - 1 1/2 tablespoon
  • Milk - 2 cups
  • Water - 1/2 cup
  • Cardamom powder - 1/2 teaspoon
  • Jaggery (Cane sugar) - 1 tablespoon or to taste
  • Black pepper powder - A pinch or two
  • Dry ginger powder (Sonth powder) - A pinch or two
  • Ghee - 1 teaspoon

How to make Sweet Ragi Malt | Ragi Kanji | Ragi Porridge

  • Making Ragi Malt is really easy and quick.
  • Heat ghee in a saucepan and roast in the ragi flour on low flame till it gains a bit darker color and gives aroma.
  • Now slowly add in some milk and keep on stirring with a whisk to avoid lumps.
  • Add in the remaining milk and water and bring it to a boil on medium heat.
  • Time to add in jaggery, cardamom powder, pepper powder, ginger powder and stir to combine well.
  • When it comes to boil you would notice that it has gained thickness just how a malt or porridge should be.
  • Remove from heat.
  • Sweet ragi malt is now ready. You can serve in cups or glasses with a pinch or ginger powder and little jaggery.

Note - 

If making Sweet Ragi Malt for kids or toddlers, avoid adding ginger powder or pepper powder or adjust the amount to preferance.



Step by Step Photos and Recipe of Sweet Ragi Malt | Ragi Kanji | Ragi Porridge

Step 1-

Heat ghee in a pan.

Step 2 -

Add in ragi flour.

Step 3-

Roast ragi flour on medium heat till it changes color and gives out aroma of roasted flour.

Step 4-

Add in milk and stir vigorously to avoid lumps.

Step 5-

Bring to a boil.

Step 6-

Add jaggery, black pepper powder, ginger powder and stir.

Step 7 -

Bring to a boil till it begins to thicken. Also when jaggery has melted completely, then time to remove it from heat and serve.

Step 8-

Serve hot with a garnish of grated jaggery and a pinch of black pepper powder.
