- Mix all the ingredients and knead into a dough with water. Cover with a wet muslin cloth and keep it to rest for 15-20 minutes.
- Now, grease your palms with little oil and make medium size balls of this dough.
After this stage there are 2 ways to make the ‘Batis’-
Technique 1 –
Grease a baking tray with oil and place the bati balls leaving about 2 inch space in between. Bake these batis in a pre heated oven at 200 degrees for 30 -40 minutes or till the batis turn brown. Keep turning occasionally to ensure even cooking.
Dip these batis in desi ghee and serve.
Technique 2 –
This method involves boiling the bati balls and then deep frying or baking them. The batis made this way are also called ‘Bafla Batis’. Here’s the detailed procedure ……
…..boil sufficient water in a vessel and gently slide in the balls. After 5-7 minutes you will notice that balls have gained little volume and are floating on the upper surface of water. Now, remove from heat and transfer the boiled batis on a plate. You can either deep fry these batis or bake in oven/electric tandoor.
For baking, grease a baking tray with oil and place the batis. Bake in a pre heated oven till brown.

Tip –
You can stuff the batis with boiled potato or paneer mixture. Make sure that you make it spicy enough to match the true Rajasthani flavor.
