Recipe Ingredients

  • Potatoes (Peeled & cut in cubes) - 2 large
  • Cauliflower cut in florets - 200 gms. or a small one
  • Green peas - 3/4 cup
  • Ginger (Roughly chopped) - 2 inch piece
  • Green chilli - 2 broken
  • Onion (Sliced) - 1 medium
  • Garlic paste - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Red chilli powder - 1 teaspoon
  • Garam masala - 2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Bay leaf (Tej patta) - 1
  • Salt - To taste
  • Oil - 1 tablespoon

To Garnish -

  • Freshly chopped coriander
  • Ginger cut in juliennes

How to make Aloo Gobhi Adraki

To begin with making this restaurant style Aloo Gobhi Adraki we need to heat oil in a pan.

  1. Add in cumin seeds, bay leaf and allow to crackle. Add sliced onion, green chilli and fry on medium heat while stirring occasionally till it gets light brown in color.
  2. Now add in garlic paste, turmeric powder and cook till the masala separates from oil.
  3. Time to add in the cut potato cubes, peas and cauliflower florets. Season with garam masala, red chilli powder, salt and give a nice stir.
  4. Sprinkle some water and cover the pan with lid. Let it simmer on low flame for 10-15 minutes. Open the lid to check the doneness, otherwise cover and continue with simmering.
  5. Take care that the veggies should not burn at the bottom, you might sprinkle some more water if all the water is soaked up and the veggies are still raw.
  6. When the vegetables are cooked to your perfection, then stir very gently and garnish with ginger and chopped coriander.
  7. Remove from heat and serve hot.
