These crunchy masala kajus or spiced cashew nuts get ready in no time and taste absolute delish with tea, Cappuccino or as a comforting munching snack. At my home, this is a sure shot hit in every get together or festivity be it Diwali, Holi, New Year party or even birthday party. Not only this, I often love to make it for Navratri and other fasts/vrats with just a minute change in recipe i.e. substitute common salt with farali salt or sendha namak. Check for recipe with 3 ways to make Roasted Cashew Nuts.

Here in this recipe we have given a light seasoning of black pepper and salt, but you can go for your favorite spice mixes, peri peri, chat masala, garam masala and create your very own flavor. The best part of this recipe is that, you can make these spiced cashew nuts in large batches and store in air tight container. Stays fresh for more than a month.

Just remember, after frying and seasoning cashews, let it rest for a while otherwise it won’t be that crunchy !



*Since these spiced cashew nuts have a long shelf life, hence they also make one of the best munching snack for travel purpose. For healthy homemade munching, pack this with methi khakhra, nimki, moong dal samosa along with mango pickle and Rajasthani green chilly pickle.

*For festive get together, do serve these spiced cashew nuts with mix vegetable cutlets,  khaman dhokala and aloo methi tikki with assorted chutneys and sauces.

*Cashew nuts are energetic and recommended for kids. For healthy lunch box you can pack them with paneer tawa masala or khatte meethe aloo along with spinach thepla.

*During winters, I love to enjoy my evenings with a giant mug of frothy Cappuccino and these lovely spiced cashew nuts.

Recipe Ingredients

  • Cashew nuts – 200 gms.
  • Ghee – 2 tablespoon
  • Salt – To taste
  • Black pepper powder – 1 teaspoon or to taste

How to make Masala Kaju

  • To begin with making these delectable spiced cashew nuts, we need to heat ghee in a pan. Do not bring it to smoking point.
  • Add in the cashew nuts and fry on low heat till golden brown. Keep stirring constantly as nuts tend to burn very fast.
  • Transfer to a bowl.
  • Sprinkle salt and black pepper powder and give a toss.
  • Spiced cashew nuts are ready, but before serving let it rest for a while, say 10 minutes or it won’t be crunchy at all.
  • Serve this delicious kaju masala as required or you can also refer our serving suggestions.
