Recipe Ingredients

  • Moong dal (split yellow lentil) - 1 cup
  • Whole wheat flour - 1.5 cups + extra for dusting
  • Salt - To taste
  • Cumin seeds (Jeera) - 1 teaspoon
  • Coriander seeds (Khadi dhaniya) - 1 teaspoon slightly crushed
  • Asafoetida (Hing) - 1/4 teaspoon
  • Red chilly powder - 1 teaspoon
  • Garam masala powder - 1 teaspoon
  • Dry mango powder (Amchur) - 1/2 teaspoon
  • Water - To make dough
  • Oil or ghee

How to make Moong Dal Paratha

Making Dal Filling -

To begin with making Moong Dal Paranthe, we need to wash and soak the lentil in sufficient water for about half an hour.

  1. Drain the excess water. In a pan heat 1/2 tablespoon of oil and add in coriander seeds, cumin seeds, asafoetida. When you get a nice aroma of spices add in the soaked dal.
  2. Cover the pan and cook on low to medium heat for 10 minutes or till dal is tender and retains the shape. Remember, we don’t have to cook it completely otherwise it would turn mushy.
  3. Remove the excess water from cooked dal. Transfer dal to a bowl and season with salt, red chilly powder, garam masala, amchur and stir with a spoon.

Making Dough -

  1. Now our filling is ready and we can proceed to making dough. Take whole wheat flour in a mixing bowl, add little amount of salt and knead a soft dough with water.

Rolling & Cooking Moong Dal Parathas -

  1. Divide the dough in lemon size balls and take some dry flour in another bowl for dusting.
  2. Now take one ball, flatten it slightly, dust in flour and roll in a circle of about 4 inches in diameter.
  3. Put a spoonful of dal mixture in the centre and bring the edges together to make a ‘Potli’. Flatten it slightly with your palm, dust flouyr and roll into a Paratha.
  4. Place it carefully on a hot griddle or tawa and cook on medium flame for 30-40 seconds. Spread little oil or ghee on upper side and flip. Let it cook it brown spots appear on the lower side. Again apply oil on upper side and flip to cook uniformaly on either side.
  5. Remove on a plate and continue the process with remaining dough and filling.
  6. Serve hot. 

Note - 

Do not discard the water that you drain from cooked dal. It is full of protein and minerals. Use it for making soup, curry or you can also simply knead the dough with it.
