One of the most indigenous protein sources of India, sattu is no stranger to the locals of Bihar, Punjab, Madhya Pradesh, UP, and West Bengal. Basically, ‘Sattu’ is a flour consisting of ground pulses and cerels mainly Bengal gram and barley. The old school method of making sattu involves roasting Bengal gram or channa in sand, sieving away the sand with a strainer and then pounding the roasted channa into flour.
