Aloo Chole is another variety of Chickpea or Chana curry  recipe that is made in Punjab and served with Bhatura, Puri, Roti or Cumin Rice.  Aloo chole recipe is a wonderful preparation made with Potatoes, Kabuli chana. 

It tastes a bit different from the traditional Punjabi Chole as it is not that spicy though the ingredients are more or less same, but the proportions are very unique.

If you are travelling on a Highway in North India, then you can relish this Aloo Chole at a roadside Dhaba, where they usually serve it with Tandoori Roti or Kulcha along with onion salad and pickle. Here we are giving you the exact recipe that is served in dhabas. They keep boiled chickpeas and potatoes handy and cook them with onion, tomato and spices as soon as you order your dish. This way Aloo choley is also a quick gravy that you can make if you have these ingredients Boiled beforehand.

Did you know, you can also make Chole without the gravy that is known as Pindi Chana or Chana Masala and served with Puris. Well, a more similar recipe with the same combination of aloo and chole is made in Bihar which is known as Aloo chane ki Ghugani that tastes absolutely different and great. You must try this for sure!

Potatoes are so universal that you can combine it with almost anything and also be assured of the results, as whatever you cook with Potatoes tastes superb doesn’t matter if it is a Curry, Stir Fry, Rice dish or Snack like Aloo methi curry, Aloo matar curry, Aloo pulao, Achari aloo baingan, Dahi aloo and more.



The classic combination of Aloo Chole with Bhatura or Puri along with Mango pickle and onion salad is simply irresistible and this is how it is usually served in Punjabi families for breakfast, lunch or dinner. So you can say that it is a Whole Day Meal. Exciting right…?

Who doesn’t loves Chole? Pack your lunch box with some Aloo chole, Jeera rice, Garlic pickle and Dhaniya raita. You are sure going to repeat this combo. But of course, to pack this combo meal on a bussy morning is almost impossible.

Our suggestion - Boil potatoes and chickpeas a day before and morning cooking would be a breeze.

Recipe Ingredients

For Pressure Cooking - 

  • Chickpeas (Kabuli chana/chole chana) - 2 cups
  • Potato - 2-3 medium
  • Water - 3-4 cups 

For Aloo Chole Sabzi -

  • Onion (Chopped) - 1 large
  • Tomato (Chopped) - 1 large
  • Ginger garlic paste - 1 teaspoon
  • Green chilly (Slit lengthwise) - 2
  • Turmeric powder - 1 teaspoon
  • Red chilly powder - 1-2 teaspoon
  • Chana masala powder or Garam masala - 2 teaspoon
  • Salt - To taste
  • Oil - 2 tablespoon
  • Water - 2 cups (Adjustable) 

Whole Spices - 

  • Bay leaf (Tej patta) - 2
  • Black cardamom (Badi elaichi) - 2
  • Black pepper (Kali mirch) - 7-8
  • Cumin seeds - 1 teaspoon
  • Cinnamon (Dalchini) - 1 inch stick

How to make Aloo Chole

Soaking and Pressure Cooking -

  1. To begin with making Aloo Chole Curry we need to wash and soak chickpeas in sufficient water for 8-10 hours. Drain away the excess water.
  2. Also wash potatoes very well. In a pressure cooker combine soaked chickpeas, whole potatoes with the skin and add 3-4 cups of water. Close the lid and pressure cook for 7-8 whistles.
  3. Remove from heat and let the pressure settle down. Open the pressure cooker and remove the potatoes. Peel them and either cut in cubes or just mash them roughly. Keep aside.
  4. Do not strain the boiled chickpeas, reserve this stalk….it has lots of flavor so you can use it later to make gravy.

Making Aloo Chole Curry -

  1. Now when our main ingredients (Choley & potatoes) are boiled, we can proceed to making the dish.
  2. Heat oil in a pan and fry the whole spices for a minute on low flame till they crakle and give out aroma. Add chopped onion and cook till golden. Now add in the chopped tomato and cook till it gets mushy.
  3. To this add ginger garlic paste, turmeric powder, green chilly and cook this masala till it oozes oil and leav es the sides of pan.
  4. Now add in the boiled chickpeas along with the stalk, mashed or diced potatoes, salt, red chilly powder, chana masala/garam masala. If you find that the stalk is not sufficient for gravy, then add 1 cup of water or more to preferance.
  5. Cook on high flame till it comes to a boil. After boiling, reduce the flame and cook for another 5-7 minutes.
  6. Remove from heat. Garnish with freshly chopped coriander and Aloo Chole is ready for serving. For some enticing platter, do check our Serving Suggestion for sure!
