Enchorer Torkari is a Bengali recipe of raw Jackfruit ( Katahal ) and Potatoes, wherein these veggies are cooked in a spicy and thick gravy with pure mustard oil.
This curry is robust with the pungent flavors of ginger, garlic, chilli and lots of powdered and whole spices that make it more aromatic and a perfect dish to go with luchi and rice. Of course, the classic Bengali touch with a hint of sugar has to be there.
The Bengali word for Jackfruit or Katahal is Enchor. It is also known as Gaach Patha where Gaach means Tree and Patha means Mutton. Now why it is so called, probably because after cooking the taste and texture of Jackfruit resembles with meat. That is the reason why it is often used to cook Koftas, Biryanis and Kormas. Well, we tried our hands on making Katahal Ka Keema and it turned out wonderful. Do try this recipe for sure!
A Note - Cutting Jackfruit is a tricky task and not everyone’s cup of tea. So instead of buying whole jackfruit from the market, we would suggest to buy a pack of ready made cut pieces that is easily available in departmental stores.
