Shivid Polow or Persian Dill Rice is a classic pulao with dill greens or sua saag and hails from the rich Iranian cuisine. Usually it is served during festivities with veg. or non veg. curries and raita. Most people also know it by the name Sua Rice.
We know that ‘Dill Greens’ have a stronger flavor compared to other herbs. So as to bring out the flavors, this recipe uses minimal proportion of spices maximizing on the robust flavors of fresh dill leaves. As you read this recipe, you get to know that it uses mostly ‘Whole Spices’ rather than powdered ones just for a hint of flavors and aroma without interfering the natural pungency of greens. Moreover, the caramelized flavors of garlic and onion taste delightful with dill. Apart from 'Pulao', dill greens or sua saag make delightful main course stir fries and curries also.
