Palak tamatar ki subzi is a delicious recipe with spinach and tomatoes that you can make in less than 20 minutes with simple ingredients in hand. This makes an excellent combination of two vegetables that are simple in taste, texture and high in nutrients. ‘Tomatoes’ are often under rated in Indian cooking because in most of the recipes either they go into the sauted masalas or used in pureed form in curries and stews. But, this recipe makes utmost use of these humble tomatoes as one of the key ingredient. Chopped spinach and whole or roughly chopped tomatoes are simmered with an array of spices and taste lip smacking with some lemon juice.
For a healthy and delicious home cooked meal serve cabbage soup with milk as appetizer. In main course, relish this palak tamatar ki subzi with soft phulkas or Punjabi masala parantha along with dal tadka, Hydrabadi style achaari aloo baingan and Kachumber salad. In winters, do not miss to add instant ginger pickle in your menu! This not only aids digestion, but also goes very well with the meals.
