Savor the goodness of two delectable vegetables in this simple stir fry made with fresh seasonal spinach and sweet corn. A very healthy recipe that you can put together in less than 15 minutes if you have some boiled sweet corn in hand. We have mildly spiced the veggies with crushed black pepper and tossed in lemon juice for extra zing. To keep it simple and healthy, the whole of cooking is done in just 1 tablespoon of oil. Makes a quick lunch or dinner recipe and tastes absolutely fantastic as a side dish with phulkas and paranthas along with a vegetable stew or dal.
For routine days let’s keep a simple and healthy platter that can keep you energized all day long. Serve this palak makai ki subzi with south Indian bottle gourd churakka thoran or beans poriyal with moong dal. Pair along a humble bowl of dal tadka with some phulkas and boiled rice. You can also serve healthy and refreshing mint coriander chutney to tickle everyone’s taste buds!
