Sabudana Ki Kheer is a common dessert recipe made during Navratri and other fasts. Sabudana Kheer is very easy and simple recipe also delicious and extra ordinary in taste, though you don’t need to wait for a Vrat or festival to make and taste this kheer.

Enjoy it whenever you crave for something sweet as making this Sabudana ki kheer is really quick, easy and it does not requires any elaborate preparations as well. Just soak sabudana in water overnight and you are all set to turn it into this lip smacking dessert the next morning. The best part, this kheer tastes good both hot and cold, so you have a preference the way you want to serve. Besides, it is also very light on tummy, so sometimes even after a full meal you can have a small bowl of this sabudana kheer to satisfy your sweet tooth.

A word of caution - This kheer gains thickness after cooling, so keep in mind the consistency you want in your final dish. Hence after the sago pearls are cooked well, the remaining cooking is up to you, in case you want a thick consistency.

Recipe Ingredients

  • Sabudana (Tapioca pearls/sago) - 1/2 cup
  • Milk - 3-4 cups
  • Sugar - To taste
  • Green cardamom (Choti elaichi) - 2 crushed
  • Dry fruits of choice - 1/4 cup roughly chopped
  • Saffron (Kesar) - Few strands (Truly optional)
  • Ghee - 1 teaspoon

How to make Sabudana Ki Kheer

  1. To make this Sabudana Ki Kheer the only preparation that you need to do in advance is soak sabudana in sufficient water for 5 hours or over night. But before soaking, do not miss to wash it in water 2-3 times the way you do for rice and lentils.
  2. After soaking you would notice that these wonderful pearls have swollen and become double in size. Strain away the excess water and keep these soaked pearls aside.
  3. Now in a pan heat ghee and roast the dry fruits till light golden in colour. Transfer to a plate.
  4. In the same pan add in milk, soaked sabudana and cook on low to medium heat while stirring constantly to avoid burning at the bottom.
  5. After the milk comes to a boil, you would notice that sabudana pearls have become translucent. This is the exact check that sabudana is cooked well. Though you can also check while mashing a pearl with your fingers.
  6. Add in sugar, cardamom powder, toasted dry fruits, saffron soaked in little water or milk and cook on low flame for 2 minutes or more. Do remember to switch off the flame a level before your desired consistency in case you want to serve this kheer chilled, since it gains thickness after cooling.
  7. Sabudana ki kheer is now ready. Either serve hot or cool at room temperature and then chill in refrigerator, you would enjoy this both ways.
  8. Well, my personal favorite is ‘Chilled’!
