Bottle gourd thoran is a very healthy and traditional South Indian preparation of ash gourd. This can be easily made for a quick lunch or dinner and relished with phulkas and rice along with a dal or curry on side. Ash gourd also known as ‘Lauki’ or ‘Ghia’ in most places is a power house of minerals. In this recipe we have added least amount of spices and cooked it with a simple seasoning of mustard seeds, curry leaves, lentils and freshly grated coconut.
Did you know, Ayurveda recommends the consumption of cooked lauki for better digestion. Besides, lauki juice is very useful for weight loss!
Garnish bottle gourd thoran with some toasted coconut flakes and serve with kadala curry, dimer kosha, pavakkai stir fry (Bitter gourd/karela stir fry) flavored with fennel seeds along with steamed rice topped with ghee. You can also serve chutney idli as side !
