This ‘Pavakkai stir fry’ recipe perked with fennel seeds and dry red chilly is a simple preparation of ‘Karela’ or ‘Bitter gourd’ that is crisp, spicy and can be served as a quick side dish with paranthas, puris and ghee rice. The recipe requires handful of staple ingredients while maximizing on the distinct flavor of bitter melons or gourds. Besides, a generous squeeze of lemon juice just before serving, enhances the flavors and perfectly balances the spices. Either serve it with the regular Indian ‘Thali’ or you can pack in lunch box with some paranthas, raita and pickle.

Recipe Ingredients

  • Pavakkai/karela/bitter gourd – 250 gms.
  • Onion – 1 medium (Sliced)
  • Fennel seeds (Slightly crushed) – 2 teaspoon
  • Red chilly powder – 1/2 teaspoon
  • Dry red chilly – 2-3 (Broken into two)
  • Salt – To taste
  • Water – To sprinkle
  • Oil – 2 tablespoon

Spices to be ground –

  • Coriander seeds – 2 teaspoon
  • Onion seeds – 1/4 teaspoon
  • Fenugreek seeds – 1/4 teaspoon
  • Fennel seeds – 1/2 teaspoon

How to make Pavakkai Stir Fry

  • To begin with the recipe, dry roast all the spices under second category and grind to a fine or slightly coarse powder. Keep this aside.
  • Cut pavakkai into pieces (If prefer, remove the seeds) and put in a bowl of salt water for 10 minutes. This helps in reducing bitterness
  • Next, drain out all the excess water and pat dry the pavakkai with a kitchen towel.
  • Now, heat oil in a pan and add crushed fennel seeds and broken red chilly. Saute for few seconds.
  • Add sliced onion and sauté till golden brown.
  • Add in the pavakkai, stir and sprinkle some water. Cover the pan with lid and allow to simmer on low to medium heat for 10-12 minutes or till the pavakkai are cooked to your choice.
  • Add in the red chilly powder, spice mix (Step 1) and salt. Give a nice stir and continue cooking for 2 more minutes.
  • Turn off the heat.

Our spicy pavakkai stir fry is now ready. Just before serving add some lemon juice and relish with hot paranthas, puris, cumin rice or as SUGGESTED ABOVE.
