Karachi Halwa is a traditional sweet dish from Bombay and made of Cornstarch (Araroot) and very popular recipe in countries like Pakistan, Afganistan and some parts of India too. Karachi Halwa step by step recipe instructions, ingredients and photos. 

Karachi Halwa or Bombay Karachi Halwa has a Jelly like texture which is delicious, soft, but slight chewy in nature and dry fruits give it a wonderful ‘Bite’.

I would be honest with you guys, this is not the kind of your ‘Everyday Sweet’ as it requires lots of labour in the making. You would literally end up building your muscles stirring the delicacy till it reaches the final stage. But since the results are so phenomenal, hence you might love to try it for any festivity like Eid, Ramadan or Diwali.

Let me share my personal experience when I first tried cooking this at home. I used a normal ‘Wok’ and this was my biggest mistake!

So after a continuous stirring process, when the mixture started ‘Thickening’ it was a real challenge, as it became so ‘Sticky’ that it was nearly impossible to scratch off the sides of wok. This ended up with a huge messy mixture of cooked cornstarch with lumps. No points for guessing that it was of no use.

So, the very first thing I learnt was -

"Always use a good quality non stick pan or wok for making Karachi Halwa and not the ordinary one that you use for your everyday cooking.........!!!"

For the second trial I revised my recipe and this time my Karachi Halwa checked all the right notes. It was soft and beautiful pieces of spongy jelly sweet that you see in above pics. Actually the recipe to make this Karachi Halwa is simple, just cooking cornstarch in sugar syrup till it reaches ‘Halwa’ consistency. But here comes the ‘Tricky’ part….to make it look GLOSSY…!!! If you miss on this, your halwa won’t have a shine (Which is a character of Karachi Halwa) though would taste good. So here I have added all those points in this recipe that would definitely help you out, especially if you are trying it for the first time.

To make this Halwa, you can use any colour like yellow, green, red….though I would strongly suggest to use natural food extracts. Also use your choice of dry fruits like almonds, cashews or pista chews.

Recipe Ingredients

  • Cornstarch (Araroot) - 1 cup
  • Water - 3 + 2 cups
  • Sugar - 2 1/2 to 3 cups
  • Ghee - 1 cup approx.
  • Lime juice - 1 tablespoon
  • Food color of choice - Few drops
  • Cardamom powder - 1 teaspoon
  • Choice of dry fruits (Roughly chopped) - 1/2 cup + For garnish

How to make Karachi Halwa

To begin with making Karachi Halwa we need to mix cornflour in 3 cups of water. Keep aside.

  1. Now in a wide non stick pan or wok, take sugar and 2 cups of water. Put on heat and let it come to a boil.
  2. Now slowly and carefully pour in the cornflour solution and stir.
  3. Add in cardamom powder, food color, lime juice and keep stirring.
  4. You would notice that gradually the mixture would attain thickness and become sticky.
  5. This is the time start adding ghee, but only 1 tablespoon at a time. Mix well to make a homogeneous mixture.
  6. Again add a tablespoon of ghee and incorporate well into the mixture. Continue this process till the halwa looks glossy.
  7. By the time you would end up with the given quantity of ghee, your halwa would come together as a big mass and leave the sides of pan.
  8. Switch off the flame and add the chopped dry fruits. Halwa mixture is finally ready to set.
  9. Quickly grease a pan or ‘Thali’ with ghee and carefully transfer the mixture. Level it with a spatula and top with remaining dry fruits.  Do not miss to gently press it with a spoon or spatula as this would help dry fruits to stick well to the surface.
  10. Allow to set in room temperature which would approximately take 3 hours.
  11. With a sharp knife cut halwa in desired shapes and serve.
