Chinese Schezwan Eggplant is a delicious way to cook eggplant or aubergine (Baingan) in a spicy schezwan sauce and goes great with noodles, fried rice or plain rice. Though Chinese food is known for being Meaty and the traditional recipe to make these Eggplant involves the use of Pork.

But somehow we always find a way for vegetarians like us who want to enjoy authentic dishes minus the meat. So for them this is an easy and Vegetarian recipe to make Chinese style Eggplant with ginger-garlic flavor and a generous use of Til or Sesame Seeds that goes great.

This recipe is a boon for days when you crave for something Different or Hat-Ke from the usual food and all it takes is not more than 20 minutes to combine everything. Did you know, Schezwan Sauce is a fiery hot and spicy sauce made of chillies, garlic, sauteed onion and is often served with dishes like Momos, Spring Rolls, Fried rice and so on. So while we are using this super hot sauce in our recipe, make sure that the given quantity is apt for us and might not suit your taste buds. Therefore , be flexible enough to combine this sauce in your dish as per your palate.

Recipe Ingredients

  • Eggplant - 250 gms.
  • Ginger (Finely Chopped) - 1 teaspoon
  • Garlic (Finely chopped) - 1 teaspoon
  • Onion (Finely chopped) - 1 medium
  • Sesame seeds (Til) - 1 tablespoon toasted
  • Schezwan sauce - 1 table spoon or to taste
  • White vinegar - 1 teaspoon
  • Water - 1/2 cup
  • Cornflour - 1-2 teaspoon
  • Salt - To taste
  • Sugar - 1 teaspoon
  • Red chilly flakes - To taste
  • Oil - 2 tablespoon

To garnish -

  • Sesame seeds (Toasted)
  • Spring onion greens
  • Chilly flakes

How to make Chinese Schezwan Eggplant

To begin with making these delicious Schezwan Eggplant, we need to wash Eggplant, remove crown and cut in long finger size strips.

  1. Now heat oil in a pan and cook these Eggplant till tender. Sprinkle some water and cover the pan while cooking.
  2. While our Eggplant are cooking we shall make a slurry with 1/2 cup water, cornflour, sugar. Just mix everything in a bowl and stir well with a spoon till sugar is dissolved.
  3. When Eggplant are cooked, remove on a plate and now in the same pan add some more oil if required.
  4. Add in chopped onion, garlic, ginger and saute just till tender. We dont need to brown them.
  5. To this add in schezwan sauce, cornflour slurry, toasted sesame seeds, chilly flakes and stir.
  6. Season with salt, vinegar and let everything come to a boil.
  7. Add in the cooked Eggplant and simmer on low heat for 2-3 minutes.
  8. Garnish with toasted sesame seeds, chopped spring onions, chilly flakes and its done!
