Punjabi cuisine is wholesome and full of rustic flavors. ‘Aate Ka Halwa’ is yet another popular recipe from this very rich cuisine and mostly served during winters. It is one of the prominent dessert to be served on ‘Lohri’ festival. This halwa is made with staple ingredients like whole wheat flour or ghehu ka aata, sugar, ghee and flavored with cardamom powder. The texture is very smooth, creamy and little amount of semolina (Rawa or sooji) can be added to make it slight grainy.
The ‘Kada Prasad’ that you get in Gurudwaras is actually aate ka halwa with loads of desi ghee. It is very rich and the halwa actually floats in a pool of ghee. So, if you want to make kada prasad, then double (…or may be more) the quantity of ghee given in the recipe.
Having fun time with friends at home in winters…..serve this rich aate ka halwa in mitti ke kasore or earthen pots. Tem with besan ki nan khatai without oven, aloo methi tikki and nimki with dahi ki chutney and ginger tea.
