Recipe Ingredients

  • Whole wheat flour – 2 cups
  • Peanut butter (Crunchy or smooth) – 1/2 cup
  • Unsalted butter (Soft) – 2 tablespoon
  • Milk – 3/4 cup
  • Castor sugar – 1 cup
  • Baking powder – 2 teaspoon
  • Baking soda – 1/4 teaspoon
  • Egg – 1 lightly beaten
  • Vanilla essence – Few drops (Optional)
  • Unsalted peanuts – 1/2 cup (Crushed)

How to make Peanut Butter Muffin

  • To begin with making these whole wheat ‘Peanut butter muffins’ you need a large mixing bowl.
  • Combine the flour, baking powder and baking soda.
  • Mix in the plain soft butter and peanut butter till it gets a crumbly texture.
  • Now whisk in the castor sugar, egg, milk and vanilla essence. Do not over mix. Whisk until you get a homogeneous mixture.
  • Now, line a muffin tray with butter and dust some flour.
  • Scoop each mould with the batter. Sprinkle some crushed peanuts on top.
  • Bake in a pre heated oven at 180 degrees for 20 minutes or until golden brown and well risen.
  • Cool on a wire rack and serve.
  • Drizzle some homemade vanilla butter cream icing on top and serve.
