Punjabi style carrots and peas stir fry is a staple diet during winters and teams up very well with paranthas, phulkas, rice along with any dal or curry. This is a simple recipe with handful of ingredients that can be put together in less than 20 minutes or so. To keep it healthier we have used just 1 tablespoon of oil and the added amchur (Dry mango powder) which perfectly balances the sweetness of carrots. The combination of fresh seasonal carrots and green peas is sublime and the color contrast seems very inviting in this dish. You can also pack for lunch box with some puris and pickle.

Recipe Ingredients

  • Carrots – 250 gms.
  • Green peas – 250 gms. or 2 cups approx.
  • Asafetida – A pinch or two
  • Cumin seeds – 1 teaspoon
  • Turmeric powder – 1/2 teaspoon
  • Red chilly powder – 1/2 teaspoon
  • Punjabi garam masala – 1 teaspoon
  • Coriander powder – 1/2 teaspoon
  • Dry mango powder – 1 teaspoon
  • Salt – To taste
  • Water – 1/4 cup
  • Oil – 1 tablespoon

To garnish –

  • Freshly chopped coriander

How to make Gajar Aur Hari Matar Ki Subzi

  • To begin with, peel of the carrots and cut in 1 inch pieces. Keep aside.
  • Now heat oil in a pan and add cumin seeds, asafetida and sauté for few seconds.
  • Add in the carrots, peas and all the powdered spices. Give a nice mix.
  • Sprinkle some water and cover the pan with a lid. Simmer on low to medium flame for 15-17 minutes or till the veggies are cooked to your choice.
  • Season with salt and remove from heat.
