‘Rice Khichu’ is yet another delicious and healthy street food from the state of Gujarat that can be served as breakfast or tea time snack. It is made with dough using rice flour, spices and is served hot with oodles of oil. This is the same dough that is also used for making traditional sun dried ‘Rice Papads’.

Traditionally, ‘Khichu’ is made with several flours and combinations like wheat flour, jowar flour, nachini flour etc. and rice khichu is one of them. Here we have given small donut kind of shape, but you can also shape the khichu dough with moulds, cookie cutters or simply serve in bowls. To keep it healthier, we have omitted pouring oil on top while serving.

Serve rice khichu with mint coriander chutney, peanut coriander chutney or dahi ki chutney as a one bowl meal/snack or sprinkle some farsaan on top and serve with ginger tea.

Kids love to relish it with sweet sonth chutney.

Recipe Ingredients

  • Rice flour – 1 cup
  • Cumin seeds – 1 teaspoon
  • Asafetida – ¼ teaspoon
  • Ginger (Chopped) – 2 teaspoon
  • Green chilly (Chopped) – 1 teaspoon or to taste
  • Lemon juice – 2 teaspoon or to taste
  • Sugar – ½ teaspoon (Optional)
  • Salt – To taste
  • Oil – 1 tablespoon
  • Water – 3 cups (Adjustable)

To garnish –

  • Freshly chopped coriander
  • Finely chopped green chilly (Optional)
  • Red chilly powder – To sprinkle
  • Chaat masala – To sprinkle
  • Sev/farsaan

How to make Gujarati Rice Khichu

  • To begin with making Gujarati ‘Rice khichu’, we need to heat oil in a pan/skillet.
  • Add cumin seeds, asafetida, chopped ginger, green chilly and sauté for a minute.
  • Now, reduce the flame and slowly add water. At this point, you need to take care because the water may splutter.
  • Add salt and allow it to boil on high heat.
  • As soon as the water begins to boil, mix in the rice flour and stir vigorously with a wooden spatula. This ensures that there are no lumps and you get a homogeneous mixture.
  • Now again reduce the flame, cover your pan with lid and let it simmer for 5 minutes.
  • Khichu is ready, mix in lemon juice and remove from heat. At this point khichu would resemble like a soft dough. You can serve it as it is in bowls or shape with mould and serve in a plate, but some people prefer to steam this dough.
  • So for that, divide the khichu dough into equal parts of desired shape and size and steam for 10-15 minutes on medium to high heat.

Steamed ‘Rice khichu’ is ready. Remove from heat and transfer to serving plates. Serve as suggested above!

Tip –

  • Making this khichu ‘Dough’ is a bit tedious task as the dough is quite sticky. So, use a good quality non stick pan instead of an ordinary one. This would ease out the process.
