Lemon Rice is a staple diet in South India and a quick fix recipe too. A dash of lime juice makes everything better and this is absolutely true in this case.
This dish packed with the tickle of lime juice and punch of curry leaves, mustard seeds, dry red chilly is tangy, refreshing, mild spicy in taste and usually does not requires any accompaniments, but sometimes for a change you can team it with papad or pickle/ chutney of choice.
Since lemon rice is made with Steamed Rice, hence you do not need to spend time in soaking and cooking raw rice and grinding or roasting of masalas. This feature definitely makes it a 5 minute dish and can be conveniently packed in lunch boxes too. A suggestion - use Leftover Rice instead of freshly cooked one as this would give the perfect texture & fluffiness to your dish.
Kids love lemon rice with mango pickle and pomegranate raita. Sprinkle some Andhra Paruppu Podi on rice for a delicious twist of flavors. Pack in spill proof tiffins for school for a healthy snack.
For a light meal you can team lemon rice with potato raita or coriander raita along with khatte meethe aloo or Rajasthani mangodi kadhi.
Make travels more fun with homemade food instead of scoring restaurants and gorging over unhealthy dishes. You can pack a quick meal box with lemon rice, green chilly pickle, methi thepla and aloo chane ki ghugani.
