Kadhai Egg Curry is a simple but irresistible combo of eggs and capsicum and pairs great with all types of Indian breads and rice. Onions, tomatoes and capsicum sauted together with some assorted spices taste delightful in this curry and when you serve it with some onion salad along with phulkas, paranthas or pulao, it makes a scrumptious meal. You must have tried ‘Kadhai Paneer’ for sure, this kadhai egg curry is more or less similar to it, the only difference is that here we have also used some freshly scrapped coconut that gives body to the gravy and also renders a beautiful aroma and flavor.
For a simple and filling lunch/dinner spread, serve kadhai egg curry with Gujarati kadhi or baingan bharta along with plain roti or makke ki roti and jeera rice. Since this kadhai egg curry is very spicy, so do not miss to team with onion cucumber salad, boondi raita and roasted papad. This would soothe your palatte.
