Chana Saag Aloo is a delightful stir fry from Punjab that you can enjoy with paranthas and theplas in lunch or dinner. Green chana also known as Choliya or Harbara is easily available in markets during winters and one can make variety of dishes from it. The greens or tender stems of these chickpeas are also edible and loaded with nutrients. They can be used in the same way as you use other greens like spinach or fenugreek for making curries, stir fries or paranthas.
The recipe to make this Chana saag Aloo is also almost similar to making other stir fries with the combination of potatoes and greens like Soya Saag Aloo and Hare Pyaz Ke Aloo. The robust flavors of ginger, garlic, onion mingle very well with the rustic taste of Chickpea Greens and actually having this stir fry with the meal is a ‘Treat’ in winters which you should not miss.
Though the making of this Chana Saag Aloo is easy, but however the preparation takes a bit of time since all green leafy veggies need to be cleaned, washed and chopped first before adding in any gravy, stir fry or dough.
