Pesto pasta is one of those last minute recipes that I look for whenever crave for something quick, easy and comforting. To me it is like cooking a whole new dish under 15 minutes and an excellent Sunday brunch is ready to be served.
The hero of this classic Italian dish is ‘Homemade Pesto Sauce’ which is made with basil, pine nuts and olive oil. However this time I didn’t had pine nuts in my pantry, hence opted for walnuts instead and it worked great with my dish. This pesto sauce is so delicious that you might want to make it in large batches and store in air tight containers in refrigerator for instant use. Just toss your boiled pasta with 1-2 tablespoon of this pesto sauce and there you are with a divine bowl of Italian pesto pasta. The best part, this pesto pasta tastes great both hot and cold ways ….and yes you can throw in whatever veggies like carrots, broccoli, mushrooms and more. I have made this dish with spiral pasta but you can opt for any variety like fusilli, penne, macaroni or noodles.
*Make your Sunday brunch ravishing and comforting. Serve this pesto pasta with spicy cashew nuts and giant glasses of cold coffee.
*For small get together at home, you can pair this pesto pasta with grilled potato wedges, garlic bread or baked bread fries. Do not miss to team with some assorted dips like yogurt dip or Italian tomato salsa.
*Since pesto pasta can also be served cold, hence you can pack this for your kid’s tiffin as well with some roasted cauliflower bites and Indian snacks like rawa namak pare or nimki.
