Gajar Pak or Gajar Ka Halwa is one such easy dessert recipe that you can make for any festivity. Basically it is Gajar Ki Burfi or Carrot Burfi that has a soft and melt in mouth texture.

The recipe to make Gajar Pak is almost similar to Gajar Ka Halwa, the only difference lies in the shape. This also makes a wonderful recipe for Vrats or Falahars like Navratri, Shivratri, Janmashtami, Teej, Karwa Chauth and so on.

Here we have used Milk Powder, but you can also opt for adding Khoya/Mawa, Fresh Malai or Condensed Milk. Each of these recipes taste wonderful. Many people even cook Gajar Pak in pressure cooker, but I don’t like it much as this way the water is not evaporated well and you do not get that authentic rich flavors.

Gajar Pak or Gajar Ka Halwa is one such easy dessert recipe that you can make for any festivity. To make Gajar Pak we need Ghee, grated carrot, Milk, Sugar, Cardamom powder and dry fruits.

Recipe Ingredients

  • Gajar - Carrot (Washed, peeled, grated) - 1/2 kg.
  • Milk powder - 1 cup
  • Ghee - 2 tablespoon
  • Cardamom powder - 1/2 teaspoon
  • Sugar - To taste
  • Chopped dry fruits of choice + Extra for garnish

How to make Gajar Pak

  • To make Gajar Pak ( Gajar Ka halwa ) we need to heat ghee in a pan and shallow fry the dry fruits till golden. Remove on a plate and keep aside.
  • Now in the same pan add in grated Gajar ( carrot ) and mix well. Spread it evenly in the pan and cook on low to medium heat.
  • Keep stirring in between and then again spread and cook. Continue this process till you notice that all the water has evaporated well.
  • Now add in the milk powder, sugar, dry fruits (Reserve few dry fruits for garnish) and mix to combine well.
  • Keep cooking on low heat till it turns glossy and leaves the sides of pan.
  • Remove from heat. Greaze a pan ot thali with ghee and spread the carrot mixture evenly keeping around 1/2 to 1 inch of thickness.
  • Top with druy fruits and gentlty pat with a spatula or spoon so that they stick well to the fudge.
  • Let it rest for 15-20 minutes and then cut with a knife in desired shapes. In above snap you see that I have given them ‘Peda’ kind of shape. You can try this too.
  • Gajar Pak is ready!
  • Note - Be very careful while adding sugar as Milk Powder already has sugar in it and Gajar ( Carrots ) also have a natural sweetness.
