Sambhar is one of the most popular recipe from South Indian cuisine and a must have with dosa, puttu, medu wada, idli, upma, uttapam and this list goes on as it could also be served with almost anything simple like roti, parotta and rice. Basically, sambhar is a spiced lentil soup made with assorted seasonal veggies and spices. Tamarind extract is added for a punch of flavors and a little amount of jaggery or cane sugar is added to balance these flavors. Hence, it is also a very healthy recipe as you get all the goodness of lentil/dal and fresh seasonal vegetables together.

Sambhar is also known as 'Sambharu' in Karnataka and 'Khuzhambu' in Tamil Nadu. Traditionally, it is made with cooking lentils and vegetables separately and then mixing these steamed veggies with cooked dal along with sambhar powder and some more ingredients. Finishing touch is given with an aromatic tempering of mustard seeds, asafetida and a generous amount of curry leaves.

Recipe Ingredients

  • Toor dal (arahar dal/yellow lentil) – 1 cup
  • Assorted veggies like brinjal, beans, pumpkin, carrot etc. cut in cubes – 2 cups
  • Tamarind extract -  1 tablespoon
  • Jaggery (Cane sugar) – 1 lemon size piece
  • Green chilli – 2 slit lengthwise
  • Salt – To taste
  • Water – 3-4 cups

 

Powdered spices –

 

For Tempering –

  • Refined oil or coconut oil – 2-3 tablespoon
  • Asafetida (Hing) – ½ teaspoon
  • Curry leaves – 10-12
  • Mustard seeds – 1 tablespoon
  • Channa dal – ½ tablespoon
  • Urad dal – ½ tablespoon
  • Dry red chilli (Broken) – 2
  • Red chilli powder – 1 teaspoon

How to make Sambhar

  • To begin with making this delicious lentil soup or sambhar, we need to wash and soak toor dal in water for at least 2 hours.
  • Now in a pressure cooker combine soaked toor dal, turmeric powder, salt with 2 cups of water. Take cut vegetables in a small bowl and place it inside the cooker. Close the lid and pressure cook for 3-4 whistles or till the lentil is cooked to your perfection.
  • Turn off the heat and let the pressure release on its own.
  • Now open the pressure cooker. You would see that we have cooked the lentil and veggies together and the lentils also retain their shape and haven’t turned mushy.
  • Take out this bowl of vegetables and mash the lentil properly with a ladle or blender.
  • To adjust the consistency add some water. Also add in the tamarind extract, jiggery, sambhar pd and cook without lid on high flame till it comes to a boil.
  • Add in the steamed veggies and cook on medium heat for 2 more minutes.
  • Check salt and remove from flame.
  • Sambhar is ready, but it would be tasteless if we don’t temper.
  •  
  • For Tempering -
  • So, for tempering heat oil in a pan and add the mustard seeds, red chilli, lentils and sauté for few seconds till the lentils turn golden and give a nice aroma.
  • Add in asafetida, curry leaves and finally red chilli powder. Turn off the heat.
  • Immediately pour this tempering over the sambhar. Be careful while doing this as it might splutter.
  • The very popular vegetable sambhar is now ready. Remember it is always served piping hot so no further delays. Serve it immediately with dosa/idli or you can also refer our yummy serving suggestions above!
