This Punjabi style ‘Carrot & Mushroom Masala’ is a simple and irresistible combination of button mushrooms and fresh seasonal carrots in a spicy onion tomato based masala gravy. The natural sweetness of carrots blends very well with rich assorted spices that we have used here as both whole and ground form. Moreover, the aroma of freshly roasted and ground spices is sure to please your palate making it perfect to be served with all sorts of Indian breads, stir fries and rice dishes.

Furthermore, they are rich in vitamin A, Vitamin C, Vitamin K, vitamin B8, pantothenic acid, folate, potassium, iron, copper, and manganese making it extremely nourishing especially for kids, pregnant women and old age people.



Punjabi style carrot & mushroom masala makes a great combo when paired with dal makhni, makke ki roti, steamed rice or potato pulao along with pomegranate raita (Anar ka raita) and instant garlic pickle.

Recipe Ingredients

  • Carrots – 2 medium
  • Mushrooms – 200 gms.
  • Onion – 1 large
  • Tomato – 1 medium
  • Ginger garlic paste – ½ tablespoon
  • Turmeric powder – ½ teaspoon
  • Red chilly powder – 1 teaspoon
  • Water – 1 cup (Adjustable)
  • Salt – To taste
  • Oil – 2 tablespoon

To be ground –

  • Cumin seeds – 1 teaspoon
  • Coriander seeds – 1 tablespoon
  • Cinnamon – 1 inch stick
  • Black pepper – 5-7
  • Clove – 1
  • Nutmeg – A pinch

Whole spices –

  • Cumin seeds – 1 teaspoon
  • Coriander seeds – 1 teaspoon (Crushed)
  • Black cardamom – 2 (Crushed)
  • Cinnamon – 1 stick
  • Bay leaf – 1

How to make Carrot & Mushroom Masala

  • To begin with making this aromatic carrot & mushroom masala, we need to peel the carrots first and cut in 1 inch pieces. Also clean the mushrooms and cut in halves or quarters. Keep aside.
  • Heat a pan and roast all the spices listed in ‘To be ground’ category. Cool down and grind in mixer to make a powder. This is the main masala that would give flavor to our gravy.
  • Meanwhile keep all the purees ready. Make onion & tomato puree separately in mixer. Keep aside.
  • Now, heat oil in a pan and add all the whole spices. Let them allow to sizzle.
  • Add in onion puree and sauté on high flame. When it begins to separate oil add in all the powdered spices, ginger garlic paste and tomato puree.
  • Give a nice mix and cook on medium to high flame while stirring occasionally.
  • If you notice that the masala is sticking to the bottom of pan, then add some water and continue cooking.
  • When this masala leaves the sides of pan, add in the carrots and cook till they get tender.
  • Now it’s time to add the mushrooms, water, salt  and cook on high flame to bring it to a boil.
  • After boil, lower the heat and simmer for 5-7 more minutes.
  • Turn off the heat & cover with lid.
