Khichuri is a traditional recipe from Bengali cuisine which is very healthy and light on palette. It is often made during Durga Puja and festivities, topped with oodles of desi ghee and served to Maa Durga as Prasad.
Basically Khichuri is rice and lentils cooked together with lots of seasonal veggies and assortment of spices, both whole and powdered. The speciality of this khichuri or khichdi is the hint of ‘Sugar’ and the quality of rice being used. Usually it is made with rice called ‘Govind Bhog’ which is packed with fragrance and that gives a special festive flavor to this khichdi. But, in case if you don’t get this rice, you can make it with the regular variety of ‘Basmati’.
The Khichuri recipe is very easy and since this khichdi is cooked in pressure cooker, hence it doesn't takes much of time to get ready. You can serve it with curd or Potato raita , Lauki Raita, Anar raita or spicy Coriander raita.
The simplicity of Khichuri recipe makes it so elegant and distinct amongest all the Navratri recipes, probably that is why In Bengal the 9 days festival is incomplete without a humble bowl of this bhog khichuri.
