Gujarati Dal Dhokli is a traditional Gujarati and a One Pot Meal recipe of cooking toor or arahar dal with bits of whole wheat flour called ‘Dhokli’.  The Gujarati Dal Dhokli recipe is quite simple, wheat flour is kneaded to a dough and rolled like a thick chapati, but instead of cooking over a griddle or tawa, it is cooked in boiling dal. Doesn’t it sounds interesting?

It is thick, spicy and semi sweet in taste due to generous tadka of whole spices and a hint of sugar or jaggery. Finishing touch is given by the ever popular style of Gujarati tempering with peanuts, mustard seeds, cumin seeds, green chilli and asafoetida.

This is also a No Onion Garlic Recipe.

This dal preparation is an absolute classic example of the wonderful combination of spicy, sour and sweet flavours making a wholesome meal in itself. Yes, you don’t need to accompany this with any side dish, just pour hot Dal Dhokli in a bowl, top with ghee and enjoy!

We have already mentioned that Dal Dhokli is a complete meal in itself and does not requires any accompaniments. However if prefer you can team it with some simple and quick rice recipes like Sesame or Til Rice, Mint Rice, Jeera Rice. You can also serve this typical Gujarati way with farsaan like Patra, Nimki and Poha Namkeen.

Recipe Ingredients

For Dal - 

  • Toor/arahar dal - 1 1/2 cups
  • Turmeric powder - 1 teaspoon
  • Tomato (Finely Chopped) - 1 medium
  • Jaggery powdered or sugar - 1 teaspoon
  • Salt - To taste
  • Water - 4 cups
  • Green chilli (Roughly chopped) - To taste
  • Ginger (Grated) - 1 teaspoon
  • Lime juice - 1 tablespoon 

For Dhokli - 

  • Whole wheat flour - 1 cup
  • Gram flour (Besan) - 1 tablespoon
  • Salt - 1/2 teaspoon or to taste
  • Carrom seeds (Ajwain) - 1/4 teaspoon
  • Oil - 1-2 teaspoon
  • Water - To knead dough 

For Tempering (Tadka) -

  • Ghee - 2 tablespoon
  • Cashew nuts - 5-7
  • Peanuts - 1-2 teaspoon
  • Asafoetida - 1/4 teaspoon
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Red chilli powder - 1/2 teaspoon or optional 

To Serve -

  • Ghee
  • Freshly chopped coriander

How to make Gujarati Dal Dhokli

To begin with making Gujarati Dal Dhokli we need to wash and soak toor dal in water for about an hour or two.

Cooking Dal -

  1. Take soaked dal in a pressure cooker and combine all the remaining ingredients listed under Dal Category.
  2. Add 4 cups of water and pressure cook for 3-4 whistles.
  3. Let the pressure settle down before opening the lid. See if dal has turned too thick then add hot water to preferance and blend dal with a hand blender to make it smooth.
  4. Now when dal is almost done we can proceed to making ‘Dhokli’.

Making ‘Dhokli’ -

  1. To makie Dhokli, take wheat flour in a mixing bowl and combine with the remaining ingredients listed under Dhokli category.
  2. Knead to a stiff dough with sufficient water. Divide this dough into four equal size balls.
  3. Keep some flour separately for dusting. Take one ball, dust into flour and roll into a thick roti or chapati.
  4. Cut pieces with a knife the same way as you do to make barfis or katli.
  5. This is the Dhokli that we now need to cook or poach in boiling dal.

Cooking Dal with Dhokli -

  1. Put the pressure cooker with dal on gas stove (Without the lid) and cook on medium to high flame. Keep strring occassionally.
  2. When it begins to boil, reduce the heat and put in dhokli….approx. 10-12 pieces at a time. Do not stir at this moment otherwise you are going to break all the dhokli. After 2 minutes add the remaining dhokli.
  3. Simmer on low heat for 8-10 minutes or till dhokli is well cooked.
  4. Remove from heat.

Final Tempering or Tadka -

  1. Heat ghee in a tadka pan. Add in mustard seeds, cumin seeds, asafoetida, peanuts cashew nuts and fry for few seconds or till they give out aroma.
  2. Add in red chilli powder and immediately pour this tempering over Dal Dhokli.
  3. Gujarati Dal Dhokli is now ready. Enjoy!
