Punjabi cuisine is famous for its rich and delectable dishes filled with flavors and aroma. Baingan ka Bharta is one such gem from this classic range and makes a scrumptious meal with hot phulkas and ghee smeared tandoori rotis.

The typical method of making this lip smacking dish involves the cooking of brinjals (Aubergine/ Eggplant) in tandoor (Clay oven) till the skin turns black and charred, thus endowing  a beautiful smoky flavor. It is then peeled off and combined with rich spices, herbs and mustard oil.

However, this method of cooking is not possible now days as we do not owe tandoors or charcoal burners at our homes. Hence, we would be doing it on gas stove over direct flame. Here, we would also give you the method of cooking the brinjal in oven. Over to the recipe !

Recipe Ingredients

  • Brinjal (Large) – 1
  • Tomato (Medium) – 1 chopped
  • Onion (Medium) – 1 sliced
  • Garlic (Minced) – 3-5 pods + 4 pods whole with skin
  • Green chilly (Slit lengthwise) – 2
  • Ginger (Chopped) – 1 teaspoon
  • Red chilly powder – 1/2 teaspoon
  • Garam masala powder – 1/2 teaspoon
  • Coriander powder – 1/2 teaspoon
  • Salt – To taste
  • Oil (Preferably mustard oil) – 2 tablespoon

To garnish –

  • Freshly chopped coriander – A handful
  • Chopped ginger
  • Chopped green chilly

How to make Baingan Bharta

  • To begin with the recipe, wash brinjal and pat dry with a kitchen towel. Make few slits on the surface with a knife and insert whole garlic pod into each.
  • Apply some oil all over and put over direct flame on your gas stove. (Alternatively, you can also cook in oven at 200 degrees which might take 4o-50minutes).
  • Keep turning the brinjal after every 2-3 minutes so that it gets evenly cooked.
  • When the skin gets black and charred all over prick a fork/knife to make sure that it is cooked well to the core. This may take upto 20 minutes depending upon the size of the brinjal.
  • Remove from flame and dip in a bowl with water. This will cool down the brinjal and within few minutes you will be able to peel the charred skin with hands.
  • Chop the cooked brinjal. You will notice some juice coming out of it. Reserve it as it is full of flavors and we would be using in our recipe.
  • Now, heat oil in a pan (Preferably mustard oil) and add sliced onion and minced garlic. Saute till pink.
  • Add chopped tomatoes and the powdered spices. Cook till tomatoes get slight mushy.
  • Add in the cooked & chopped brinjal along with its juices. Give a nice stir.
  • Season with salt and cook for 2 minutes.
  • Remove from heat.
