These ‘Brandied raisin and walnut muffins’ are a perfect holiday treat to your family. Tender, spongy and an awesome combination of soft and crunchy textures, these muffins are a delight to relish on its own or when paired with a scoop of your favorite ice cream. We have used soaked walnuts and raisins in brandy for about 2-3 days, but the longer you soak the better. Keep a batch of soaked nuts in brandy or rum for your holiday season to use whenever required. To make things easier, mix all the dry ingredients a night before and whip a quick fluffy batter the next morning to bake these golden beauties!
*These brandied raisin and walnut muffins are great for thanksgiving and make an exotic dessert for winter parties. You can also try serving with Cappuccino or black coffee for a fancy treat.
*Celeberating Christmas eve..?....then you might want to create a platter with banana bread, buttermilk muffins with vanilla buttercream icing and nan khatai. You might also pair strawberry milkshake with some peanut butter muffins, kids would love this.
