This lovely combination of lemon and coriander brings a hearty bowl of soup that is just perfect to keep you warm on cold evenings. It is healthy, light and the tangy flavors of lemon feel very refreshing. The recipe is quite simple without much of ingredients and definitely a keeper for those lazy days when you just want to relish a quick bowl of homemade soup with some bread.  This recipe serves two people, but in case you have friends around…just double the ingredients.

Keeping the recipe simple and healthier we haven't added any cream, hence you can have this soup without any guilt. Refreshing flavors of lime juice and freshly chopped coriander are sure to please your taste buds.  If prefer, an added doze of red chilly flakes is sufficient to blow your mind. Serve with bread, croutons, salad, baked crakers or eggs....this is undoubtedly going to be your ultimate comfort meal during winters.

Recipe Ingredients

  • Fresh coriander (Roughly chopped) – 1/2 cup
  • Lemon juice – 2 tablespoon or to taste
  • Onion (Roughly chopped) – 1 medium
  • Ginger (Finely chopped) – 1 teaspoon
  • Garlic (Minced) – 1 clove
  • Green chilly (Finely chopped) – 1 teaspoon (Optional)
  • Crushed pepper – 1/2 teaspoon
  • Vegetable stock (Unsalted) – 3 cups
  • Corn starch – 1 tablespoon
  • Tomato sauce – 1 tablespoon (Optional)
  • Salt – To taste
  • Oil – 1 tablespoon

How to make Lemon & Coriander Soup

  • To begin with making this vitamin rich lemon coriander soup, first we need to heat oil in a saucepan.
  • Add minced garlic, chopped onion, ginger, green chilli and sauté for a while or till onions turn translucent and the raw smell goes.
  • Meanwhile, make a slurry by mixing corn starch and tomato ketchup with some water.
  • Now, add vegetable stock to the saucepan along with the slurry and stir. Allow it to come to a boil.
  • Add salt, crushed pepper, lemon juice, coriander leaves and simmer for two minutes on low heat.
  • Remove from heat.

Light and healthy ‘Lemon coriander soup’ is now ready. Transfer into your favorite soup bowls and serve as suggested.
