This is the easiest recipe to make paneer bhurji when you have no time to make a wholesome dish or running out of vegetables. Not only it serves as a humble side dish to rotis and paranthas, but you can also use this recipe to make quick stuffing for paneer sandwiches, rolls and wraps. To simplify the whole process we haven’t used any onion, garlic or tomatoes. Hence, with just handful of ingredients you can make it in less than 10 minutes and with less than 1 tablespoon of oil.
Top this paneer bhurji on toast or homemade garlic bread with some tomato ketchup and serve in breakfast with tea or coffee.
To make ‘Paneer Bhurji Wrap’ for tiffins take one plain parantha and layer with tomato ketchup or roasted tomato bell pepper salsa. Place lettuce leaves,onion rings, chopped tomato and spoonfuls of paneer bhurji. Make a roll and serve.
For main course, pair paneer bhurji with spicy aloo channe ki ghugni, palak ki kadhi or aloo vadi curry along with a plate of simple onion cucumber salad !
